WHITEBAIT FRITTERS (makes 15 fritters)

·       Rinse 250 gm of whitebait and drain well

·       Mix 2 table spoons of Flour with 4 table spoons of milk until smooth

·       Add 2 egg yolks, salt, pepper, zest of 1 limes and 1/2 table spoon of chopped dill

·       Mix until well combined

·       Whisk 2 egg yolks till stiff

·       Add whitebait to egg yolk mix and then fold in egg whites

·       Spoon into greased regular muffin tins, fill about 1/3.

·       Bake at 180°C for 8-10 minutes
